The study was conducted to assess the effects of supplementation of Brahmi powder at different levels in muffins. Fresh Brahmi leaves were dried in a cabinet drier at a low temperature (50+5°C) to moisture content of 5 percent. Loss in weight and moisture of fresh Brahmi leaves was studied after the interval of 30 minutes. During the drying process maximum loss in weight occurred during falling rate period that was first one hour of drying. Brahmi powder thus obtained was supplemented at a level of .5%, 1%, 1.5%, 2%, 2.5%, 3%, 3.5%, 4%, 4.5%, 5%, 5.5%, 6%, 6.5% and 7% in the muffins using a standard recipe. Muffins were analysed for weights, volume, specific volume, total phenols and antioxidant activity. The weight, volume and specific volume of the muffins decreased significantly whereas total phenols and antioxidant activity increased significantly with increase in level of brahmi powder. Muffins were evaluated by the panel of  semi trained judges using nine point hedonic scale. Significant difference was observed between different samples supplemented at different levels in terms of flavour, colour, apperance and overall acceptibility. No significant difference was observed in texture between the control and samples supplemented at different levels. The product was found to be highly acceptable at the levels of .5% to 2% level of brahmi powder .This study showed that Brahmi can be supplemented at the levels of .5 to 2% without affecting the sensory properties of the muffins.
